How To Get Perfect Jumbo Muffins

To get perfect high-domed muffins like you would in a bakery at home, there is a specific process to get the best results.

While you can simply fill muffin cups halfway and pop in the oven until done, to get the super puffy, airy, and light jumbo muffins you love from your favorite bakery, you’ll want to follow these important tips for how to get high domed muffins at home:

  • -Bake Jumbo Muffins 5-10 minutes more than you would regular muffins.
  • -Use a spatula or a spoon to mix muffins, not a mixer.
  • -Refrigerate dough, covered, for at least one hour after mixing, up to overnight.
  • -Preheat the oven to 425 degrees.
  • -Bake muffins for about 6-8 minutes (until they have risen just past the muffin cup top) at 425 degrees.
  • -Reduce heat to 350 for the second half of baking.
  • -Always let muffins cool on a rack instead of in the pan, as leaving muffins in the pan will make the bottoms soggy as the steam we used to build a high domed muffin gets trapped and makes the texture soggy!

How To Freeze Muffins

These muffins are great for meal prep since they can be frozen easily if you have too many, or if you’d like to have them portioned out individually.

  • Tightly wrap each muffin in plastic wrap.
  • Add plastic wrapped muffins to a large freezer sized ziploc bag and freeze for up to 6 months.
  • When ready to eat, let muffin thaw naturally overnight in the refrigerator or in a cool, dry place.
  • Pop in the oven or microwave to warm, and enjoy!

Easy Double Chocolate Chunk Muffins Recipe - delicious, fluffy and moist double chocolate chunk muffins are bursting with chocolate flavor - and tons of chunks of chocolate in every bite!

Ingredients

  • 9 1/2 oz all purpose flour about 2 cups
  • 3 1/2 oz cocoa powder about 3/4 cup
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 1/2 cups sugar
  • 2 extra large eggs
  • 8 tbsp unsalted butter melted
  • 1 cup plain yogurt or buttermilk
  • 1 tbsp vanilla extract
  • 1 1/2 cups chocolate chunks or chocolate chips

Instructions

  1. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  2. Toss the chocolate chunks into the dry ingredients to coat the chocolate chunks in flour (which will help them not sink to the bottom of the mix when baking!)
  3. Make a well in the middle and add in eggs and vanilla, whisking vigorously.
  4. Using a large spoon, mix rest of ingredients in to muffins until large clumps are gone and batter is consistently mixed - but do not overwork muffin batter.
  5. Cover batter and refrigerate for one hour to overnight.
  6. Preheat oven to 425 degrees.
  7. Fill muffin cups to 3/4 full.
  8. Bake at 425 for 6-10 minutes, until muffins have puffed slightly above muffin liner.
  9. Reduce heat to 350 (DONT open oven when you do this) and bake until sides of muffins are slightly crunchy and a toothpick inserted in the middle comes out clean (after about 25-30 minutes total baking time.)

What is the secret to high muffins? ›

The idea here is to start the muffins in a very hot oven for just a short amount of time. This activates the baking powder and allows the muffins to shoot up in height quickly. We then turn the heat down and continue to cook for longer. This is done to avoid over-browning and overbaking.

How to make chocolate muffin mix better? ›

Add Fresh or Frozen Fruit to the Batter

Add strawberries to chocolate muffins. You can even experiment with crushed pineapple and mandarin oranges to add a citrus twist to your favorite muffins. We recommend adding 1/2 to 1 cup of fresh or frozen (thawed and drained) fruit. Gently fold into the batter.

How do you make the top of muffins crispy? ›

The secret to produce a crispy, crackly muffin top was to sprinkle a generous amount of sugar over each muffin. The sugar melts the muffin top, causing it to spread more, and gives it a crunchy texture. I decided to try this same technique on this banana muffin recipe, too.

Is it better to use butter or oil in muffins? ›

Using oil as a substitute for butter in muffins can result in a lighter and more tender crumb, but it may also produce a slightly different flavor, depending on the type of oil used. Applesauce can also be used as a substitute for butter in muffins, as it provides moisture and can help to keep the muffins tender.

What not to do when making muffins? ›

Here are some common mistakes that might be causing this:
  1. Over mixing the batter.
  2. Overfilling the muffin tray.
  3. Leaving the muffins in the pan after they have baked.
  4. Berries, nuts, and chocolate chips sink to the bottom.

What does adding an extra egg do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

Should you let muffin batter rest? ›

Quickbreads and muffins are hydrating batters, which means the flour absorbs the liquid over time, resulting in a very moist muffin, and improving the flavor. So let your muffin batter rest, up to 24 hours if possible.

What does adding more eggs do to muffins? ›

Eggs are responsible for giving baked goods structure, which means the amount you use directly affects the resulting texture. Using too few eggs will make your desserts dense, but using too many will make them rubbery.

Why add yogurt to muffin mix? ›

If you've seen any of my muffin recipes, you know that I love to bake with yogurt. It helps keep the muffins light and moist while adding a healthy dose of protein, fat, and calcium!

Why can't you mix muffin batter for too long? ›

Overmixing batter can lead to tough muffins

Overmixing batter can inhibit that, ending with dense muffins instead of fluffy. This happens when you mix for too long. It can destroy air bubbles that are necessary for a light and airy texture (via The Kitchn).

What can I add to box muffin mix? ›

Try adding raisins and dried cranberries to the muffin mix, along with a cup of chopped walnuts. Sprinkle the top with some extra cinnamon sugar mix for a coating of sweetness to add to the multitextured layers. The flavors of nutty, fruity, chewy, and sweet play well with each other.

How do you make high domed muffins? ›

According to O. Corriher, the way to get a perfectly puffed up dome on your muffins is to increase your oven heat. She says that 400° should do it, no matter what the recipe says. The higher baking temperature means that the the outside edges of the muffin will set while the middle is still liquidy.

How do I get my muffins to rise higher? ›

Start the oven on high

Bake your muffins at 400°F for the first 5 minutes, then drop the temperature to the more standard 350°F for the remainder of the bake time. This method sparks the leavening agents (especially baking powder) in the batter to react quicker, creating that gorgeously risen top.

What is the big sugar on muffins called? ›

Sanding sugar is a large crystal sugar that's great for decorating because it won't dissolve with heat. It also creates a sparkly effect because of the large size of the crystals that reflect light. It's great for decorating treats like cookies, cakes, scones, muffins, and even candies.

What oil is best for moist muffins? ›

Choosing vegetable oil is the best option for baking moist, delicious baked goods. Canola oil, the most common vegetable oil used in baking, doesn't add a strong flavor. It allows your cake's flavor will shine through while still achieving a moist texture.

How do you moisten baked muffins? ›

Brush the muffins with milk while they're still hot, and the milk will soften the crust enough to make the muffins enjoyable again. Cream or half-and-half also will work and make the muffins taste slightly richer.

Why are bakery muffins so much better? ›

The best bakery-style crumb muffins start with cake flour

Cake flour is more finely ground and has less protein, which leaves the muffins with a fine, light crumb and soft texture. Using cake flour is an easy way to avoid heavy, dense muffins even if you end up stirring just a bit too much.
