Now that I have your attention…I’m going to blow your mind. These super easy truffles and NO BAKE and only have three ingredients! You might already have these three ingredients on hand right now as we speak.

Unlike traditional truffles where you have to use a double boiler to incorporate chocolate and cream together….these three ingredients are simply mixed together in your stand mixer.

AS IF delicious, easy three ingredient truffles weren’t enough to get a batch going ASAP….THERE’S MORE! This DIY is super budget friendly. You can make a batch of these (about 45 truffles) for about $7-$8 worth of ingredients! I’m already thinking of all the people I’ll be able to knock off of my holiday list with a pretty little package of truffles!

This is also a great little activity to do for a girls night in! If you have kids they’ll enjoy dipping and decorating the truffles.

I’ve been making these truffles for many years now. I’ve got a ton of pro-tips that you’ll want to read through to ensure flawless, beautiful truffles. Be sure to read through each step carefully! Okay let’s get started!

{MUST READ: Oreo Cookie Truffle Making Hacks}

There are a few things that you’ll need to really be successful at making really elegant truffles. There’s a small investment in some tools that you’ll use over and over again if you are interested in candy making.

The first is a Wilton Candy Melting Pot. Ohhhhhh my heavens this makes truffle dipping so much easier. It melts and keeps your chocolate at the perfect temperature without scorching or worse seizing.

If you don’t have a melting pot you COULD melt the chocolate in the microwave or over the stove but let me WARN you….you will be constantly reheating the chocolate over and over again. After a few reheats the chocolate will scorch and stiffen/seize up making it nearly impossible to dip the truffle in the chocolate and get a smooth coating.

Another option is using a double boiler if you have one or can create one at home….the problem with double boilers is getting the temperature right. Figuring out a stable temperature for melting & keeping the chocolate warm can take some trial and error.

So, if you really want to take all the heartache and guesswork out of making truffles….I really, really highly recommend that you invest in the inexpensive Wilton Melting Pot. This is the most reasonably priced model I’ve seen on the market. I have two of them because I am almost always dipping white and dark chocolate….but I think if you’re just starting out it’s fine to start with one and see how you like candy making before buying more.

I really wish I knew where my candy tool set is right about now. Unfortunately I’ll be forced to use a knife and fork for this post which is doable but not recommended. What happens when you use a knife and fork is that you get an excess of chocolate pooling on the fork. As you scrape the truffle off with the knife so comes the excess chocolate. The chocolate then pools under the truffle & you’ll have to trim it later (and hopefully not crack the truffle candy shell in the process).

{Step 1: Grind Oreo Cookies in a Food Processor}

I have a fairly small capacity7 cup Kitchen Aid food processor. When I make these truffles I grind about 5 cookies at a time. If your food processor is bigger you may be able to grind much more. You want to grind the cookies up to the consistency of bread crumbs. You want to grind in smaller batches so you don’t have big cookie chunks that can’t make it down to the cutter head.

{Step 2: Mix Cookie Crumbs with Cream Cheese in Stand Mixer}

Cut the 1/2 block of cream cheese into smaller cubes. Using the paddle attachment of your stand mixer combine the cookie crumbs and the cream cheese cubes. Use the “mix” setting for roughly 3-4 minutes. The cream cheese should be fully incorporated (no white cream cheese portions are visible). When fully combined you should be able to roll the mixture into one inch balls without dropping any crumbs.

{Step 3: Roll Cookie Dough into 1″ Balls & Freeze}

Roll the dough into 1″ inch balls. Try not to exceed this size if you want to put your truffles into a mini cupcake liner. Mini cupcake liners really give the truffles a classy touch and hide small inconsistencies from truffle to truffle. They’re best for use at parties so your guests can handle the truffles without getting their fingers chocolaty.

Place all of the rolled truffles on a flat surface like a cutting board or a cookie sheet. Place truffles in the freezer for 45 mins.

{Step 4: Dip Frozen Truffles in Melting Pot}

Place frozen truffle on the dipping tool and dip into the chocolate. Keep truffle on the tool at all times. Pull out the truffle and tool and bang tool on the side of the melting pot several times to shake excess chocolate off. Place truffle on a non stick surface like wax paper, parchment or Silpat using a butter knife to slide it off the fork.

{Step 5. Quickly Decorate Truffles}

Place contrasting color chocolate in a Wilton Decorating bag with a small amount of the pointed tip cut off (you can also use a gallon sized ziploc bag with a small corner cut off) Place bag in microwave and melt chocolate. Quickly zip back and forth with icing bag to decorate the truffle before the under coating cools. It’s important to do this as soon as possible so that the two chocolates can bond together.

{Step 6: Cool, Remove Excess Chocolate with Sharp Knife}

Remove any excess chocolate with a sharp knife. Place truffle in a mini cupcake liner.

Expert Truffle Dipping Tips

A few more pro-tips before we part ways. It’s completely possible to do this all by yourself…but it’s helpful and quicker to have one person dipping the truffles and one person decorating them after they are placed on the wax paper.

Also, take just a few truffles out of the freezer at a time to dip. You don’t want the truffles to defrost completely before you can dip them. If the truffles are allowed to soften you’ll get some mixing of cookie chocolate and white melted chocolate.

You can substitute any type of Oreo cookie in this recipe. They are making so many different flavored Oreos these days (like pumpkin spice latte Oreos or golden Oreos for instance) that you can also use. Just make sure the package is about the same size.

Finally, keep in mind that these are made with fresh ingredients. They need to be refrigerated when not being enjoyed! These will keep in the refrigerator in an airtight container for about two weeks.
